Refreshing Raspberry and Ginger Coolie

A refreshing summer drink .... 

Difficulty: Very Easy
Serves: 4
Time: 5 mins

INGREDIENTS:

2 Handfuls fresh raspberries
1 teaspoon golden caster sugar
1 handful fresh mint leaves
5 cm piece fresh root ginger, peeled and chopped
8 shots vodka
600 ml ginger beer
ice cubes

 METHOD:

1. In a large jug, add the raspberries, sugar, mint leaves and ginger. Take a rolling pin and gently blend (crush) the ingredients together until the mint leaves have broken down.

2. Add a few handfuls of ice and again with the rolling pin crush to break down the ice a little. Top with the ginger beer and vodka. Pour into your glasses and garnish with a sprig of fresh mint and raspberries.

3. Serve and enjoy.
