Homemade Tomato Salsa


This tomato salsa is quick to make yet full of flavour, making a great garnish to many grilled fish and meat recipes. Even better it also makes for a lovely topping for the mexican classic fajitas or the perfect dip with any tortilla crisp. 

6 ripe tomatoes
1 large bunch fresh coriander
1 onion
1 large garlic clove
1 large bunch fresh coriander
1-2 limes (juice)
extra virgin olive oil
sea salt
freshly ground black pepper

1. Take the tomatoes and coriander (stalks and all) onion and finely chop and place into a bowl. De-seed the chillies, finely chop and to the other ingredients in the bowl.

2. Peel the garlic and finely chop, add to the bowl and add the juices from 1 lime and 2 tbsp of extra virgin olive oil. Mix well to combine all the ingredients. Season with salt and pepper.

3. Best served after a few hours to let all the flavours develop.
