Mmm Maple Syrup, Bacon & Cheese Muffins


Can't decide between savoury or sweet? Now you can have the best of both worlds. These maple syrup, bacon and cheese muffins combine tried and tested flavour combinations for the perfect breakfast, elevenses treat, or just to keep you going throughout the day.

  • 2 cups self-raising flour
  • 5 rashers of bacon
  • 3 tsp baking powder
  • Pinch of salt
  • 1 egg
  • 1/2 cup of milk
  • 1/2 cop of vegetable oil
  • 5 tbsp maple syrup
  • 1 cup of strong cheese (e.g. mature cheddar)


    1. Fry or grill the bacon until the edges start to crisp

    2. Dice the bacon into small squares, add to a bowl and mix in 4 tablespoons of the maple syrup

    3. Combine the flour, baking powder and salt with the bacon and maple syrup

    4. In a separate bowl, whisk the egg, oil and milk together

    5. Add the wet mixture to the dry ingredients and mix until it comes together, then add most of the cheese (saving some cheese for a topping)

    6. Fill the paper muffin cups two-thirds full and bake at 180 for 20-25 minutes, checking after 15 minutes or until a toothpick comes out clean

    7. Cool for 5 minutes before removing from the muffins from the pan onto a wire rack
