Traditionally enjoyed on Bonfire Night this sticky parkin loaf is packed full of autumn flavours of treacle and ginger.
This quick and easy recipe is the perfect treat to be enjoyed throughout Autumn, on it's own with a cup of tea or why not make it into a delicious pudding with a big dollop of warm vanilla custard.

- 220g Soft Butter
- 120g Soft Brown Sugar
- 55g Black Treacle
- 220g Golden Syrup
- 120g Porridge Oats
- 200g Self Raising Flour
- 1tsp Baking Powder
- 4tsp Ground Ginger
- 2 eggs
- 2 tbsp milk
- Grease/Line a loaf tin or Silicone Loaf Mould
- In a sauce pan melt the butter, sugar, treacle and golden syrup over a gently heat. Do not allow the mixture to boil.
In a large mixing bowl add all the dry ingredients and mix together. Gradually add the melted butter mixture and mix well.
Gradually, beat in the eggs a few tablespoons at a time. Finally add the milk and again stir well.
Pour the mixture into the prepared tin and cook for 1½ hours until firm and set and a dark golden brown and remove from the oven.
