Made with a simple cookie dough, it's the ideal recipe to fit in around all that Christmas shopping and wrapping.

TIME: 20 mins
IDEAL FOR: Dunking in a brew

  • 300g Plain Flour
  • 250g Softened Butter
  • 140g Caster Sugar
  • 2 tsp Vanilla Extract
  • 1 Egg Yolk
baking ingredients and utensils, Christmas cookies

  1. Preheat the oven to 160°C/Gas Mark 3

  2. Mix 250g softened butter and 140g caster sugar in a large bowl with a wooden spoon.

  3. Add the egg and 2 tsp vanilla extract and beat lightly to combine. Sift over 300g plain flour and mix until all the mixture is well combined

  4. You may need to get your hands in to give everything one good mix and press the dough together.

  5. Lightly flour the surface and roll out the dough to about 5mm thick (1/4 inch). Cut out your shapes and place on a baking tray with some baking parchment or non stick cooking sheets.

  6. Bake in the preheated oven for about 12 to 15 minutes. Place on a wire rack to cool and harden.

  7. The Fun Part: Getting Creative... We choose to decorate with chocolate and caramel icing pens and lots sprinkles to decorate our biscuits.
