For those on a grain free/dairy –free diet, these sweet, fluffy Paleo Pancakes are the perfect choice, and are simply made with 4 healthy ingredients! Flipping marvellous.

2 Large Eggs
3 Ripe Bananas
½ cup almond butter
2 tsp cinnamon

1. Add ingredients to a blender and give a quick whizz until combined. If you don’t have a blender simply add to a bowl, and mix well until you have a batter. Handy Tip: Use a fork to mash the banana.

2. Pre-heat a non-stick pan and lightly grease with coconut oil.

3. Add a ladle of batter, making 3-4 inch pancakes. Cook for 2-3 minutes per side.

4. Top with a mixture of fresh fruit, serve and Enjoy!
