Easy Chocolate Cupcakes


If you can't resist a little chocolate indulgence then these chocolate cupcakes will satisfy any chocolate craving. Even better the kids will loved getting involved when it comes to the decorating ...and licking the bowl!

TIME: 20 mins Prep / 15 Mins cooking
IDEAL FOR: Parties 


40g Cocoa Powder
3 Eggs (Free Eggs) 
175g Butter Softened (unsalted)
165g Golden Caster Sugar (unrefined)
115g Self-Raising flour
1tsp baking powder
4tbsp boiling water 


60g Butter (unsalted)
30g Cocoa Powder
250g Golden Icing Sugar
3tbsp Milk (whole) 


1. Pre-Heat oven to 200c

2. Line a muffin tray with paper cases. In a large bowl sift the cocoa powder and add the hot water, and mix until it resembles a thick paste. Add the remaining ingredients and mix with a wooden spoon, or an electric whisk for ease. 

TIP: When adding the remaining ingredients, carefully fold together. Over mixing will cause the cupcakes to become heavy.

3. Spoon the mixture equally into the paper cases, and bake for about 12-15 mins, until well risen and the sponge is springy to the touch. 

TIP: Insert a skewer or cocktail stick into the centre of each cupcake, if the skewer comes out clean then the cupcakes are cooked. If mixture is present then bake for a further 3-5 minutes.

4. In a saucepan (or microwave) melt the butter and pour into a bowl. Sift in the cocoa powder and add the icing sugar a little at a time, mixing continuously, until glossy. If a little too tick add a little mix until it becomes a spreadable consistency. 

5. Pipe over the cupcakes, and let the kids run wild with decoration from sprinkles, to marshmallows.
